Berry Chia dessert

This must be one of the easiest desserts I’ve ever made – and it’s delicious.  The only thing you have to remember is to soak the chia and dates at least an hour before you make the dish (don’t soak them together!)

The chia gives it ‘body’  and the frozen blueberries make it like a soft ice cream – cold and refreshing.  Add the other berries fresh, once you’ve blended, to add even more great anti oxidant support.

Serves 1

Ingredients

1 tbsp chia seeds, soaked in 3 tbsp coconut milk
50 g frozen blueberries
20-30g  any-fresh-berry-you-love, cut into small pieces
4 dates, soaked at least an hour in water, then pitted
1-2 tsp fresh lime juice depending on how much you love limes
pinch of cardamom
mint leaf or some berries for decoration

 

Method

Soak the chia seeds in the coconut milk for at least an hour until the chia thickens (it looks like tapioca – doesn’t taste like it thank goodness).

Pour this into your blender or food processor together with the frozen blueberries, lime juice, pitted and soaked dates, and the cardamom.  Blitz until smooth; add the chopped fresh berries and pour into a bowl or glass.
Decorate with some mint or more berries… and serve immediately.
